Thierry Marx, célèbre chef étoilé initiateur de la cuisine moléculaire en France, est actuellement à la tête de plusieurs restaurants, dont le « Sur-mesure », restaurant deux étoiles du palace parisien Mandarin Oriental, et la brasserie de la Tour Eiffel.
Il est connu du grand public pour sa participation en tant que juré dans l’émission culinaire « Top Chef » sur M6. Thierry Marx totalise 5 toques au Gault et Millau pour ses différents établissements.
Thierry Marx naît à Paris, et grandit dans le quartier populaire de Ménilmontant. Très jeune, cet enfant issu d’une famille immigrée d’Europe Centrale rêve de devenir boulanger, mais on lui refuse l’entrée à l’école hôtelière en raison de ses résultats scolaires faibles.
Il entre en 1978 chez les Compagnons du Devoir et y obtient son CAP de pâtissier, chocolatier et glacier à 19 ans.
Fraîchement diplômé, le jeune homme change pourtant de cap en s’engageant dans l’armée, en tant que parachutiste, puis casque-bleu au Liban. Lors de son retour en France, il multiplie les petits boulots comme vigile, transporteur de fonds ou encore manutentionnaire. Il décide de passer son BEP/CAP de cuisinier et commence alors l’ascension fulgurante : il est commis chez les plus grands, de Ledoyen en passant par Taillevent, Jamin, Chapel ou encore Robuchon. Remarqué parmi sa brigade, il devient chef cuisinier du palace Regency Sheraton Hôtel de Sydney.
Il remporte sa première étoile au Guide Michelin au Roc en Val de Tours en 1988.
En 1990, Thierry Marx dirige les cuisines du « Cheval Blanc de Nîmes », prestigieux restaurant 4 étoiles qui reçoit le tout Paris, et pour lequel il reçoit une étoile en 1991.
Féru d’Asie et de découverte, il part à l’aventure quelque temps et cuisine à Singapour, Hong Kong ou encore Tokyo.
Thierry Marx devient le chef emblématique de la cuisine moléculaire, qu’il développe de concert avec le physicien Jérôme Bibette. C’est par le biais de cette cuisine atypique qu’il parvient à se démarquer et à imposer sa griffe en bousculant les codes traditionnels.
En 2008, le cuisinier crée le « Foodlab » et, avec le chercheur en physico-chimie Raphaël Haumont, le Centre français d’innovation culinaire (CFIC), à Orsay, à l’université Paris-Sud.
De Février 2010 à Avril 2014, Thierry Marx est l’un des jurés de l’émission culinaire « Top Chef » sur M6.
Depuis avril 2010, il dirige le restaurant « Mandarin Oriental Paris ». Il y installe son restaurant « Sur-mesure by Thierry Marx », qui reçoit deux étoiles au Guide Michelin et 4 toques au Gault et Millau seulement un an après son inauguration en 2011.
À la même époque, il lance « Cuisine mode d’emploi(s) », un réseau hexagonal de centres de réinsertion et de formation aux métiers de la restauration. Son engagement social est récompensé : il est fait chevalier des Arts et des Lettres en Avril 2012, et chevalier de la Légion d’honneur en Juillet 2013. En 2014, Thierry Marx est nommé Chef de l’Année au guide Pudlo et reçoit la consécration des trois assiettes.
